For Mauro Colagreco, cooking begins with nature. Born in La Plata, Argentina, and shaped by some of France’s most celebrated kitchens, he opened Mirazur in Menton in 2006, earning three Michelin stars and international recognition for his distinctive approach to cuisine.
Beyond the kitchen, his philosophy is rooted in biodiversity, circular gastronomy and a profound respect for the natural world. As a UNESCO Goodwill Ambassador for Biodiversity, he champions seasonal ingredients, local producers and a closer connection between what grows and what reaches the table.
At Cetino, his first restaurant in Italy, Colagreco brings this philosophy to the shores of Lake Como.
