MEET MAURO COLAGRECO

Mauro Colagreco is a chef whose deep connection to nature and ingredients has helped shape a generation of contemporary cuisine. Born in La Plata, Argentina, and formed through formative years in some of France's great kitchens, he opened Mirazur in Menton in 2006, where his vision earned three Michelin stars and global recognition as one of the world's leading restaurants.
Mauro Colagreco´s work extends beyond accolades to a philosophy of circular gastronomy and biodiversity, reflected in his commitment to seasonal produce, meaningful relationships with growers, and his role as Unesco ambassador for biodiversity.
At Cetino, Colagreco brings this vision to lake Como, translating his experiences into a cuisine that feels intuitive and personal. The result is a cuisine rooted in place, seasonality, and a deep sense of connection.
